How can food waste be prevented? [Video]

Dear Food Doc,

I can’t tell you how often I am shopping in the produce section and see over-ripe avocados and bananas and tired-looking green beans. I assume much of this produce gets tossed, which is a shame. There must be a way to prevent this problem.

Sadly, as much as 40% of the food at supermarkets, homes or restaurants goes uneaten.

Due to their perishability, produce makes up the largest portion. Nearly half of the fresh fruits and vegetables that leave farms, including your bananas and green beans, end up in landfills.

Consumers not only avoid over-ripened foods, they also expect them to be blemish-free. We’re not just talking apples and oranges. Everything from avocados to zucchini must pass a produce beauty test.
