Meet the restaurant preserving Guatemala’s native corn [Video]

El Comalote is a food business in Antigua that produces corn tortillas, nachos, tostadas, tacos, dough, tamales, and more from surplus native corn. By working with native corn they are both providing nutritious products for the city as well as improving food security through a sustainable agricultural system that benefits rural economic development and preserves native crops. As an added benefit, by buying surplus corn from smallholder farmers, they reduce food waste and help slow the rate of migration away from these farm communities by ensuring that these farmers can make a viable income to support their families. With WCK funds, El Comalote purchased industrial processing machinery and improved their post-harvest handling with new corn silos and moisture detectors. They have already increased their production by 600% and are growing their workforce to 10 full-time employees. By increasing their capacity to store and process corn, they hope to double their supplier farmers to more than 60 throughout Guatemala. __ Launched after Hurricane María in 2017, and in operation through 2022, WCK’s Food Producer Network (FPN) helped smallholder farmers, fishers, and small food-related businesses revitalize their operations and begin to regrow their long-term capacity for food production, distribution, and sales. Through its three pillars—grants and loans, capacity building and networking, and volunteering and agritourism—FPN contributed to system-wide improvements in food and nutrition security and sustainability by growing the capacity of local communities to produce their own food. Meet Sebastian of Rancho Orgnico Feliz l WCK Food Producer Network grantee in Puerto Rico [Video]

Like so many other farmers, Sebastian of Rancho Orgánico Feliz is no stranger to the devastation a hurricane can cause. His farm in western Puerto Rico suffered tremendous losses from Hurricane María and WCK helped finance the farm's recovery efforts back then as one of our first grantees when we initially launched FPN. After Hurricane Fiona, WCK coordinated a group of volunteers to help Sebastian clean plots and save organic crops which are being made available to vulnerable communities through Mimosa Brunch Farm to Table—a WCK partner restaurant. Mimosa is owned and operated by Sebastian’s wife, Charlotte, and has served delicious and locally sourced meals to communities on the west side of the island as part of WCK's Hurricane Fiona Response.
